Keto Sweet & Spicy Pork Tenderloin

With beef and lamb being extremely expensive at the moment, this great cut of pork is a great cost effective meat option. 

This juicy keto pork tenderloin features a mouthwatering sweet and spicy pan sauce. It is an easy, low-carb dinner that takes only 30 minutes from start to finish. Perfectly paired with a Marlborough Pinot Gris.

Ingredients:

  • 2 tbsp Erythritol or Monk Fruit Gold (Brown sugar replacement)
  • 6 garlic cloves, pressed
  • 3 tbsp avocado oil (divided)
  • 1 tbsp Dijon mustard
  • 2 tsp apple cider vinegar
  • 1 tsp paprika
  • 1/4 tsp chipotle powder or cayenne (optional for heat)
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 900g pork tenderloin (approx. 2lb)

Instructions

  1. Preheat & Prep: Preheat your oven to 220°C (425°F).
  2. Make the Glaze: In a medium bowl, whisk together the Erythritol/Monk Fruit, pressed garlic, 2 tablespoons of the avocado oil, Dijon mustard, apple cider vinegar, paprika, and chipotle powder. Mix until it forms a thick paste.
  3. Sear the Meat: Heat the remaining 1 tablespoon of oil in a large ovenproof skillet over medium-high heat. Pat the pork tenderloin dry with paper towels and season all over with salt and pepper.
  4. Brown: Place the pork in the skillet and brown on all sides (about 4 minutes total). Once browned, remove from heat and spread the garlic paste mixture evenly over the top and sides of the pork.
  5. Roast: Place the entire skillet into the oven. Roast uncovered for 18 to 25 minutes. Use a meat thermometer to ensure the internal temperature reaches 60°C (140°F).
  6. Rest & Serve: Remove from the oven and transfer the pork to a cutting board. Let it rest for 5 minutes (the temperature will rise to the ideal 63°C/145°F during this time). Slice and drizzle with the remaining pan juices before serving.
