Ingredients

  • 3 medium courgette, shredded
  • 1 tsp salt
  • 2 large eggs
  • 1/4 cup crumbled feta (or grated parmesan)
  • 1/4 cup shredded mozzarella (or your preferred cheese)
  • 2 cloves garlic, minced
  • 2 scallions (green onions), finely chopped
  • 1/4 cup fresh parsley, finely chopped (or your favorite fresh herbs)
  • 1/4 tsp each: ground black pepper, chili powder, and garlic powder
  • 1/2 cup almond flour
  • 1 tbsp cooking oil (for pan-frying)

Instructions

1. Prep the Courgette Place the shredded courgette in a large bowl and toss it with the salt. Let it sit for 10 minutes to draw out the moisture. Do not skip this step—it is the secret to extra-crispy fritters! After 10 minutes, use your hands or a clean kitchen towel to squeeze out as much water as possible. Discard the excess liquid.

2. Mix the Batter In a separate bowl, whisk together the eggs, squeezed courgette, feta, mozzarella, minced garlic, scallions, parsley, black pepper, chili powder, and garlic powder. Once mixed, stir in the almond flour until everything is fully combined.

3. Cook to Perfection You can cook these fritters three different ways depending on your preference:

  • To Pan-Fry: Preheat a large skillet over medium-high heat with 1 tablespoon of oil. Use an ice cream scoop or large spoon to drop portions of the batter into the pan. Press down lightly to flatten. Cook for 2-3 minutes per side until deeply golden and crispy. Transfer to a paper towel-lined plate.
  • To Bake: Preheat your oven to 400°F (200°C). Line two large baking sheets with parchment paper and mist lightly with cooking spray. Scoop the batter onto the sheets, flatten slightly, and spray the tops with a little more oil. Bake for 20 minutes, flipping halfway through.
  • To Air-Fry: Preheat your air fryer to 375°F (190°C). Place the fritters in a single layer on the mesh rack or basket. Lightly spray with cooking spray. Cook for 8 minutes, carefully flip, and cook for an additional 4-5 minutes until golden brown.

4. Serve & Enjoy Garnish with a squeeze of fresh lemon and serve warm with a dollop of sour cream, tzatziki, or plain Greek yogurt. Uncork a keto-friendly wine, pour yourself a glass, and enjoy!
