Garlic & Herb Stuffed Chicken Breasts

Rich, savory, and incredibly satisfying, these stuffed chicken breasts are the ultimate zero-fuss, high-satiety dinner. By using the air fryer, the chicken stays perfectly tender and juicy on the inside while getting a beautiful golden finish on the outside. Filled with a creamy, flavor-packed blend of garlic and herb cheese and tangy sun-dried tomatoes, this recipe feels indulgent but stays strictly low-carb. It's a quick, elegant main course that is guaranteed to become a weeknight staple.

Ingredients

  • 2 large boneless, skinless chicken breasts
  • 4 tbsp garlic and herb cream cheese (such as Boursin)
  • 2 tbsp sun-dried tomatoes, finely chopped
  • 1 tbsp avocado oil
  • Sea salt and freshly ground black pepper, to taste

Instructions

  1. Preheat. Preheat your air fryer to 350°F (180°C).
  2. Prep the chicken. Lay the chicken breasts flat on a chopping board. Using a sharp knife, carefully slice a horizontal pocket into the thickest part of each breast, being careful not to cut all the way through.
  3. Mix the filling. In a small bowl, mix together the garlic and herb cream cheese and the chopped sun-dried tomatoes until well combined.
  4. Stuff the breasts. Spoon equal amounts of the cream cheese mixture into the pocket of each chicken breast. Fold the top flap of the chicken over the filling to close it, and secure the edges with a toothpick.
  5. Season. Drizzle the avocado oil over the outside of the stuffed chicken breasts, rubbing it in evenly. Season both sides generously with sea salt and black pepper.
  6. Air fry. Place the chicken in the preheated air fryer basket in a single layer. Cook for 18–20 minutes (or 16–18 minutes for smaller breasts), until the chicken is golden brown and fully cooked through (an internal temperature of 165°F/74°C).
  7. Serve. Remove the toothpicks and serve hot alongside a fresh green salad or your favorite low-carb vegetables, such as sautéed spinach, air-fried broccoli, or roasted Brussels sprouts.

Recipe Notes & Tips

  • Oven Alternative: If you don't have an air fryer, preheat your oven to 375°F (190°C). Follow the recipe through the seasoning step, then place the chicken on a baking sheet and bake for 25–30 minutes until cooked through.
  • Flavor Variations: Boursin works beautifully here, but any flavored cream cheese will do. Try an Italian-inspired variation with plain cream cheese, Italian herbs, and chopped pepperoni or olives.
